Lean Italian Meatloaf


  • 1/3 cup red onion
  • 2 tbsp low fat/low sodium chicken and vegetable stock
  • 2 tbsp minced garlic
  • 500g turkey breast or thigh mince
  • 1/3 cup breadcrumbs
  • 1/2 cup + 2 tbsp of tomato & basil sauce (or make your own pasta sauce)
  • 2 tbsp chopped basil (dried is good too)
  • 2 tbsp chopped fresh parsley


Heat the oven to 180C. Mix all ingredients (except for the 2 tbsp of marinara sauce) together in a bowl, then form the mixture into a loaf in a greased loaf tin. Brush with the remaining sauce and pop in the oven for 30-45 minutes. Let cool for a bit and cut into 8 slices. One slice is around 150kcal, but I advise you to do your own calculations with the ingredients used.
