Another tasty and oh-so-simple recipe for chicken. I don’t know about you but I do get tired of eating chicken at times so different flavours can save my dinner and help me appreciate this white meatonce again.
Here’s a quick marinade for unbelievably juicy oven-cooked chicken:
The juice of one fresh lemon
2 tbsp Worcester sauce
4 garlic cloves
4-5 chicken breast fillets or 750g skinless and boneless chicken thighs
1/4 tsp salt
1/4 tsp black pepper
Parsley for decoration
Combine lemon juice, garlic and Worcester sauce in a dish or a freezer bag and add chicken, turning all sides to make sure marinade coats chicken evenly. Leave to marinate in the fridge for 1 hour, turning occasionally. Heat oven to 220C. Place chicken onto a baking tray lined with foil or parchment. Pour remaining marinade over chicken and season with salt and pepper. Bake for 20 minutes while basting chicken occasionally with marinade. Bake for another 20 minutes or until chicken is done, serve with lemon wedges and parsley. Bon appetit!
