INGREDIENTS:
- 1 slice of lean pork loin
- 3 tbsp chopped white onion
- 1 tsp crushed garlic
- 1 tbsp olive oil
- 1 tbsp low salt soy sauce
- 1 tbsp lemon juice
- 1/2 tsp lemon zest
- 1 tsp minced ginger
- 100g Brussels sprouts
INSTRUCTIONS:
Preheat oven to 180C. Combine onion, garlic, olive oil, soy sauce, lemon juice, lemon zest and ginger in a resealable bag and add the pork. Marinate the pork for 30 to 60 minutes.
Remove pork from marinade, season with salt and pepper, and sear in a pan on all sides. Then place the pork on a baking tray, put it in the oven and bake until cooked through—about 15 to 20 minutes. Meanwhile, spray a baking sheet with cooking spray and place the sprouts on the sheet. Season with salt and pepper, and roast in the oven for 20 to 25 minutes. Bon appetit!
