Chicken Bruschetta


This is an easy one!


  • 1 chicken breast fillet
  • 1 tsp onion powder
  • 1 tsp of chilli powder
  • 1 medium tomato, diced
  • 2 tbsp fresh basil, thinly sliced
  • 1 tsp crushed garlic
  • 1 tsp olive oil
  • 160g steamed green veg (2 servings)
  • salt and pepper


Butterfly the chicken fillet and season with onion powder and chili powder. Grill or broil until done, about 5 minutes per side. To prepare the bruschetta, combine tomatoes, basil, garlic and season with salt and pepper to taste. To take the edge off the garlic, gently heat it in the pan first or it’s going to be very “hot”. Top chicken with the bruschetta and serve with steamed greens. Enjoy your new favourite dish!
