Turkey Courgette Burgers

INGREDIENTS:

  • 500g 2% turkey mince
  • 1 large courgette
  • 50g low fat cheddar
  • 1 egg
  • 1 tsp khmeli suneli
  • salt and pepper to taste

INSTRUCTIONS:

Cut off the ends and grate the courgette, then drain out the extra moisture (you can use tough kitchen paper). Mix all ingredients thoroughly together in a large bowl and divide the turkey mix into 4 or 8. Shape each quarter into a burger patty and fry in olive oil on medium heat for about 5-7 minutes a side or until cooked through. When making smaller patties (8 servings), use a lid while cooking to keep the burgers from drying out. For best results, flip only once and cook a little past the halfway mark before flipping.

You can also get around 16-20 meatballs from the same mix, which can be fried on the pan or cooked in the oven using muffin tins. The same recipe can be easily used in three different methods before any other ingredients are added, so feel free to use your imagination and also add a sauce or a dip (check out my protein dip recipe) to these delicious burgers.
