
INGREDIENTS:
- 500g 2% turkey mince (breast fillet)
- 1 head of broccoli
- 100-150g feta
- 1 egg
- 1 tsp oregano
INSTRUCTIONS:
Heat the oven to 200C and place rack on the middle setting. Grab a big bowl to mix the ingredients in: add the turkey mince, egg and oregano. Cut the florets off the head of broccoli with minimal stem remaining and steam for 3-4 minutes. Once ready, allow to cool slightly and finely chop up the steamed florets, adding these to the turkey mix. Crumble 100g feta into the bowl and mix all the ingredients up. Oil a loaf tin, pour the mix into the loaf and level it with a spoon. Crumble an additional 30-50g of feta on top and put the tin in the oven for 45 minutes. The result is a wonderfully juicy turkey meatloaf that either serves 4 big portions or 8 small ones. Enjoy!
