
INGREDIENTS:
- 500g Quark
- 100g Total 0%
- 250g strawberries
- 1 egg
- 2 tbsp flour
- 75g butter, melted
- 1 tsp vanilla essence
- 50g sugar (or 100g Stevia for a fraction of the calories)
- 100g malted milk biscuits (200g for a thicker base, extra 440kcal)
INSTRUCTIONS:
Preheat oven to 140C. Start by putting the biscuits in a bowl or a resealable bag and break them into crumbs then mix with melted butter. Spread the mixture evenly in a loose bottomed cake tin (covered in baking paper), press down and put in the fridge to chill. Prepare the strawberries and dice into small cubes. In a big bowl combine Quark, yoghurt, egg, vanilla essence, flour and sugar. Pour in the strawberries and mix. Pour mixture over the biscuit base and pop in the oven for 1 hour. After an hour, turn the oven off but leave the cake in for another hour (or longer) to stop from the cracks from appearing. Then chill for a few more hours or leave in the fridge overnight before serving. This makes 8 servings. Enjoy!
