
INGREDIENTS:
- 150-175g salmon fillet
- 1/2 tsp rosemary
- 1/2 thyme
- 100g plum or cherry tomatoes
- 100g kale, shredded by hand
INSTRUCTIONS:
Preheat the oven to 200C. Prepare a square of foil and place the salmon fillet on it, skin down. Season with rosemary, thyme, salt and pepper and fold up the foil like a pasty, leaving plenty of space for air to circulate inside. Cook for 20 minutes. A few minutes prior to the salmon being ready, sauté kale with a bit of water on the pan so it turns soft and acquires a gorgeous bright green colour. Once the salmon is ready, serve immediately on the bed of kale.
