
INGREDIENTS:
- 3 courgettes
- 1 egg
- 1/2 red onion, chopped
- 50g feta
- 60g protein cheese
- 20g Parmesan
- salt and pepper to taste
INSTRUCTIONS:
Preheat oven to 180C. Halve the courgettes and scoop out their flesh. Chop it up and put into a bowl. Add chopped onions, feta and crack the egg on top of the mix. Stir to combine then spoon into the courgette boats. Cover with low fat or protein cheese and sprinkle a bit of Parmesan on top. Cook in the oven for 15-20 minutes or until cooked through and cheese starts to turn golden. Serves 2.
