- 1 sirloin steak
- 200g Tenderstem broccoli
- 200g mange tout & babycorn mix
- 1 large pak choi, halved
- 30ml oyster sauce
- 30ml Hoisin sauce
- 30ml reduced salt soy sauce
- 1 tbsp sesame oil
- 1 tbsp olive oil
- 1 heaped tsp garlic puree or fresh garlic
Start by preparing the steak – sear the fat and cook to medium rare (2 minutes a side) or medium (2,5 minutes a side). You can also add a small knob of butter after turning the steak halfway through. Once cooked, set aside to cool and after 10 minutes slice thinly.
In the meantime, clean the pan and heat a tbsp of olive oil. Add garlic and broccoli, soy sauce and a splash of water. Stir for a couple of minutes then add mange tout, baby corn, pak choi and pour over the two sauces. Keep stirring for a couple of minutes until pak choi starts to wilt, then remove all vegetables from the pan, leaving the sauce. Pour the sirloin strips into the sauce and keep stirring for a couple of minutes, allowing the meat to soak in the flavours. Spread the vegetable mix between two plates and top with steak strips. Sprinkle with sesame seeds, chilli flakes and serve immediately. Serves 2.
