1 tsp. olive oil
2 tbsp. lemon juice
1/2 red onion, quartered
1 tsp. paprika
1 tsp. Aroma or Knorr seasoning
1/2 red bell pepper and 1/2 yellow or orange bell pepper
1 small courgette, cut into medium slices
salt to taste
3 bamboo or metal skewers

Marinate the chicken in a re-sealable bag in olive oil, lemon juice, red
onions and paprika for at least 20 minutes. Then season the chicken with Aroma or Knorr seasoning and start to skewer chicken cubes. Alternate chicken with onions and bell peppers onto the bamboo skewers. Place the chicken skewers and courgette slices on the grill, season with salt and pepper if you’d like and grill until cooked through, about 8-10 minutes. Quick and easy protein rich summer food – perfect to have for lunch or to prepare ahead for a picnic! Enjoy. 🙂
