Chicken Skewers

  • 1 large chicken fillet cut into cubes
  • 1 tsp olive oil
  • 2 tbsp lemon juice
  • 1/2 red onion, quartered
  • 1 tsp paprika
  • 1 tsp Aroma or Knorr seasoning
  • 1/2 red bell pepper and 1/2 yellow or orange bell pepper
  • 1 small courgette, cut into medium slices
  • bamboo or metal skewers

INSTRUCTIONS:

Marinate the chicken in a resealable bag in olive oil, lemon juice, red onions and paprika for at least 20 minutes. Then season the chicken with Aroma or Knorr and start to skewer the chicken cubes alternating with onions, bell peppers and courgettes. Place the skewers on the grill, season with salt and pepper if you’d like and grill until cooked through, for about 8-10 minutes. These make for an easy protein rich summer dish – perfect to have for a quick lunch or to prepare ahead for a picnic. Enjoy!
