- 2 brioche style wraps
- 150-200g steamed and chopped broccoli florets
- 50g grated mozzarella or 100g protein cheese
- a handful of baby cherry tomatoes
- 1 heaped tbsp Hellman’s Light
Mix together the vegetables, cheese and mayonnaise. (And if you really like spring onion, you can chop two stalks into the mix.) Place one tortilla on a pan on low heat and spread the mixture on top evenly, keeping the sides clear. Cover with another tortilla and press down to flatten the quesadilla evenly. After a few minutes, flip the quesadilla over (put a plate on top and turn it all upside down, then slide it back on the pan) and cook for a further 2-3 minutes. Remove from pan and cut into 4 triangles and enjoy!
